Kimura was founded by the family of Shigenari Kimura, a shogunate vassal of the Toyotomi family, taking advantage of the bountiful rice-growing climate. Since then, the sake brewing industry has flourished alongside the stable rice cultivating traditions.

During the Edo period (1603-1867), thanks to the prosperity brought by the local Innai Ginzan Silver Mine, Kimura Brewery’s business prospered. The establishment of the Ou Line by the East Japan Railway in 1905 allowed the company to begin shipping their nihonshu beyond the borders of Akita prefecture.
